This silken tofu smoothie boosts your protein intake with 23 grams of protein per serving, offering a creamy, satisfying drink. Naturally sweetened with banana and fruit, it’s both healthy and delicious. Plus, you can easily customize it with your favorite ingredients!

Whether you're looking for a quick breakfast, snack, or post-workout refuel, this smoothie has you covered. The combination of silken tofu and non-dairy milk creates a rich texture, while the optional peanut butter and flaxseeds add an extra layer of nutrition to keep you energized throughout the day.

  • Silken tofu: If you don’t have silken tofu, you can use cashew cream, coconut cream, or vegan Greek yogurt for a similar creamy texture. You could also use firm tofu, but keep in mind that it may be denser, so you’ll likely need to add extra milk or a bit of water to achieve the right texture.
  • Banana: You can use either fresh or frozen banana. Frozen bananas will give the smoothie a thicker, creamier texture and make it colder, while fresh bananas will result in a slightly lighter and smoother consistency.
  • Frozen fruit: I used frozen blueberries, but you can use any frozen fruit like strawberries, mango, or mixed berries to change the flavor. Fresh fruit works too if you're not using frozen.
  • Unsweetened non-dairy milk: I prefer using soy milk, but you can swap it for other plant-based milks like almond milk, oat milk, or coconut milk, depending on your preference.
  • Peanut Butter: This ingredient is optional, but if you prefer a different flavor, almond butter, cashew butter, or coconut butter are great alternatives.
  • Ground Flaxseed: It's optional, but you can use chia seeds, hemp seeds, or even omit it if you prefer a smoother smoothie. These seeds are great for adding omega-3 fatty acids and fiber, but keep in mind they thicken the smoothie, so if you're not drinking it right away, it's better to leave them out.

Storage instructions

Fridge: You can store leftover smoothie in the fridge for up to 1-2 days. It may discolor slightly and lose some of its original texture, but it will still be delicious the next day. If you’ve added flaxseed, it may cause the smoothie to thicken even more over time, so it’s best to leave it out if you plan to store leftovers.

Freezer: To store leftovers for longer, pour the smoothie into a freezer-safe jar and freeze for up to 1 month. When you're ready to enjoy it, thaw it overnight in the fridge.

Ingredients 
 

  • ⅔ cup unsweetened non-dairy milk, I used soy milk
  • 8 ounces silken tofu, drained, no need to press
  • 1 cup frozen fruit, I used blueberries
  • 1 banana, fresh or frozen
  • 1 tablespoon peanut butter, optional
  • 1 tablespoon ground flaxseed, optional

Instructions 

  • Fill up the blender: Add the ingredients to the blender, starting with the liquids (non-dairy milk), followed by the silken tofu, frozen fruit, banana, and any optional ingredients like peanut butter or flaxseed.

  • Blend: Blend until smooth and creamy. If the smoothie is too thick, add a bit more milk or water and blend again until you reach your desired consistency.

Notes

  • Leftover smoothie can be stored in the fridge for 1-2 days. It may change color and texture, but will still taste good. If you plan to store it, avoid adding flaxseed, as it may thicken the smoothie further.
